The 2021 Chambourcin was fermented using ambient yeast, on skins for two weeks and with no additions until bottling. Additionally, this vintage contained 10% whole cluster as part of the fermentation. The whole cluster inclusion offers imparts a savorier profile and additional structure to the wine. This lower intervention approach allows the vineyard character at Chisholm to shine through. The wine is laced with a vibrant acidity that highlights bright red fruits and a distinct pepperiness.
